Cricket Protein Banana Bread

Boost your banana bread with cricket flour for an extra protein punch. This moist and delicious bread is perfect for breakfast or a mid-day snack.

Ingredients:

  • 1/2 cup cricket flour
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 2 eggs
  • 4 ripe bananas, mashed
  • 1 tsp vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. In a medium bowl, whisk together the cricket flour, all-purpose flour, baking soda, and salt.
  3. In a large bowl, cream the butter and brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
  4. Stir in the mashed bananas and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chopped walnuts if using.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Enjoy!
